HONEY GOATS CHEESE STUFFED DATES WITH PECANS

Ladies,

I’m so excited this week! I keep waking up with such positive energy and it is driving me through the day the best way!

It could be because I have lots of lovely events on my social calendar in the lead up to Christmas and I am excited to be catching up with friends I have not seen in some time. I hope you get to do the same this Christmas – there is little that beats spending time with those that make you shine!

If your Christmas party requires you to bring an appie, I hope this will be the one you want to take! These honey goats cheese stuffed dates are incredibly quick easy to whip up in the manic holiday season and whats more, they’re blooming delicious. They’re a great side to anything else on the pot luck, and are also a great alternative for dessert to satisfy your sweet tooth.

 

Recipe

Ingredients:

  • 12 – 14  medjool dates
  • 50g plain goats cheese
  • 1 tsp honey
  • Up to 1/4 cup 0% Greek yoghurt to require desired consistency – adding by the forkful.
  • 1.5 tbsp pecan nuts – roughly chopped.

 

What to do:

  • Slice the dates lengthwise, remove and discard the pit. Be careful not to slice the dates all the way through.
  • In a small bowl, mix the goats cheese, honey and yoghurt. (I add the yoghurt a forkful at a time to create a smooth paste).
  • Using a teaspoon fill the dates with the goats cheese and sprinkle with the chopped pecans.

If you are prepping these the evening before, follow the steps above but add the nuts before serving so they keep their crunch.

Recipe

I have also made these appies with cranberry goats cheese and chopped pistachio nuts. The process is the same, and the ingredients are as follows: (no honey is needed due to the sweetness from the Cranberries)

  • 12 – 14 Medjool dates
  • 50 g goats cheese – cranberry and cinnamon
  • Up to 1/4 cup 0% Greek yoghurt to require desired consistency – adding by the forkful.
  • 1.5 tbsp pistachio nuts – roughly chopped.
