Coconut Cashew Energy Balls (GF, V)

 

ENERGY BALLS ARE MY ULTIMATE FAVOURITES … set aside 10 minutes, grab a  few ingredients, and there you have it… a healthy snack ready to go! They’re delicious, oil-free, vegan and gluten free – what are you waiting for? 

I also love how blooming adorable they look with the coconut piling on top, they remind me of fresh snow on the mountains! This got me thinking that these energy balls can easily be packed into your ski jacket, and brought out to nibble on the chairlift between runs!

Of course, if you’re not a fan of winter sports, they can still be enjoyed for pure comfort, they’re also great as a quick pre workout snack, or just as a general pick me up throughout the day.

As I’ve mentioned in previous bliss ball recipes turmeric is one of the best anti inflammatory foods out there, (remember you don’t have to have swollen joints to mean there is inflammation in your body – in fact skin rashes, such as eczema or psoriasis could be a sign of internal inflammation). One of the most important things we can do for our bodies, is heal it from the inside out with wholesome, unprocessed foods. 

With that being said, let’s get cooking these healing energy balls!

Cashew coconut energy balls

Recipe – Makes 14 Bliss Balls

Ingredients:

  • 2/3 cup raw cashew nuts
  • 2/3 cup shredded unsweetened coconut
  • 6 medjool dates – soaked in warm water for an hour before use
  • 1 tbsp maple syrup
  • 2 tbsp unsweetened almond milk
  • 1 tsp turmeric powder
  • 1/4 tsp cinnamon powder
  • 1/4 tsp ginger powder

 

What to do:

  • Remove the pits from dates.
  • Add all the ingredients to a high speed blender (I swear by nutri bullet) and blend until the mixture begins to stick together. You can always do this in 2 batches.
  • The mixture should be sticky to touch.
  • Empty the mixture into a mixing bowl, using your hands, take sections of the mix and roll into golf size bliss balls – be careful not to touch anything else in the process – you don’t want to stain your kitchen with turmeric!
  • Transfer energy balls to an airtight container and refrigerate for up to 5 days.
  • These coconut cashew balls can also be frozen and enjoyed as when you please!
